Kattuyanam rice/Red rice is a common variety of rice grown in South India, which grows quite tall and can also conceal an elephant. The rice may be used to produce idles, doses, and several other edibles. The period of production is 125-130 days. It is sometimes called parboiled rice. The red kernel is also attributed to the involvement of anthocyanins such as apigenin, myricetin and quercetin, and bran. Kaatuyanam rice is generally uncoated or partly coated, and the husk is red in color. In addition, it has a nutty flavor when eaten.
