Jaggery is an excellent, naturally safe sweetener. Made from the sap of plants (usually certain varieties of palm or sugar cane) that produce a fair amount of sucrose, it is golden brown in color and has a distinct flavor, unlike the sweetness of sugar. It is also abundant in important minerals such as Magnesium, Phosphorus, Iron, and Calcium. One must bear in mind that the sugar content of jaggery is about the same as white sugar.
